This tart is WONDROUS! Although there are no herbs in it, it has a taste like Thanksgiving stuffing.

Alsatian Caramelized Onion Tart

1 pkg. FROZEN PUFF PASTRY
3 large ONIONS
2 tbsp. DUCK, BACON or CHICKEN FAT
GARLIC to taste
SALT to taste
FRESH GROUND BLACK PEPPER to taste
2 EGGS
1 cup HEAVY CREAM

Roll out puff pastry and put into a fluted tart pan with removable bottom and freeze. (*springform pan will also work if needs be)

Saute' onions and garlic in fat very slowly to let them caramelize.
Season with salt and pepper.
Let mixture cool.
Wisk into cooled mixture the eggs and heavy cream. (Optional: add a pinch of thyme)
Pour mixture into slightly thawed pan with puff pastry.

Bake at 350 degrees until golden brown.
Be sure the center is also browned and the mixture is set.
Remove the sides of the pan and enjoy while warm.
