I just ate the BEST chicken fajita salad from the deli for lunch. Chicken, olives, red peppers, zuchinni, red onions is a yummy vinegar/olive oil /spicy dressing. What did you have?

A funky mix of chicken drumsticks, rice, blackeyed peas and garlic. A LOT of garlic. My hubby does all the slow cooker meals. I would love to say what was in the sauce, but all I know for sure, is chicken broth, and whatever was in the last two slow cooker left overs that he found. And garlic. Can't forget the garlic. I am hoping that his lunch tomorrow will be the end of it. Not one of his better concoctions. . .

Lunch today? Roasted chicken breast sammich with lite mayo and washed it down with water.

Baked Salmon with Bayou Bourbon Glaze
"Cozumel" Veggie Mix: Red Pepper, Onion, Asparagus, Sugar Snap Peas and Mango Chunks
Baked Sweet Potato with Unsalted Butter
Apple Cider

Dinner tonight will be:
"Sockarooni" Rainbow Rotini (using Paul Newman's Sockarooni Pasta Sauce)
Sauteed Asparagus Spears
Homemade Sourdough Bread
Apple Cider

Dessert TBA ;-)

I had half a Tommy's Beef dipped with mozzarella. And a bottle of water.

Actually, my husband isn't all that pocket-sized, but MAN, can he cook! :-D

I found an old granola bar in the console and nom'd on that til I got to the vets.

A brilliant lime-marinated grilled steak salad - mixed greens, tomato, one ounce of grated sharp cheddar, and 3 oz. of sliced steak. No dressing, it didn't need it!

I had leftovers from dinner last night: home made broccoli cheese soup (used a combo of extra sharp 2% cheddar and a few ounces of Koldamer (a rich Polish "swiss cheese" type)). I also had half a turkey sandwich with mustard on rye. Yummy discussion!

Um ... 98% fat-free ham and fat-free cream cheese on Mrs. Baird's & Grain Honey bread and a glass of store brand Crystal Light.
