I have a recipe for no bake Margarita cheesecake if anyone is interested :D

20- Graham crackers
½ tsp. ground cinnamon
¼ cup honey
3 tbs. butter or margarine, melted
1 envelope unflavored gelatin
2 Tbs. orange juice
4 packages Philadelphia cream cheese
1 cup sugar
¾ cup sour cream
1- Cup margarita ready-made (I like Jose Cuervo Classic Lime) Measurement can be tweaked at your discretion. Brand is your choice.
2 Tbs grated lime zest from 2 limes (optional)
Thawed whipped topping and lime slices (optional)
Coat spring form pan with cooking spray. Combine crumbs with cinnamon; stir in honey and butter until combined and press into bottom of pan, stick in fridge.
In a small microwave safe bowl, sprinkle gelatin over orange juice and set aside. In another bowl mix cream cheese at high speed until smooth. Reduce to low speed and beat in sugar and sour cream increase to medium mix 2 minutes. Reduce to low again, add Margarita and zest until combined. In microwave heat reserved orange juice/gelatin mixture at 5-second intervals til gelatin is dissolved and pourable. At low speed beat gelatin into cheese mixture in thin steady stream for about 30 seconds.
Pour batter into pan, refrigerate for at least 3 hours (I recommend overnight as best amount of time)
This makes a pretty big cheesecake. If you want to use ready made crust you will probably get 2 out of it.
I know it may seem a bit much but it is really tasty. Be aware the alcohol stays in :D

Initially, based on the name, I thought this wouldn't be good. Having read the recipe, I've changed my mind. I shall have to try it out.

Baby Margarita Cheesecakes. *warning, for those of you not in the "know' this will still have ALLL the alcohol's effects, but it's worse, because the food Has to go thru your system, so it takes longer to get schnockered, but it will happen. These are too good to be legal. :)
1-8 oz pkg creeam cheese
1-14 oz eagle brand sweetened condensed milk
1 6 0z can frozen limeaide concentrate thawed
1/3 cup tequila and a splash of Triple sec
a few drops green food coloring
1 cup coolwhip
Beat cheese until fluffy, beat in milk and concentrate
until smooth, add tequila, Triple Sec and food coloring, fold in whipped cream.
Put mixing bowl into fridge while you get the other part ready.
You need 2 containers cupcake wrappers and Nilla Wafer brand Vanilla cookies.
Grab a tray to put them on, and place one cookie into each wrapper until you have enough.
then spoon Cheesecake mix onto cookies, and let sit 1-2 hrs until firm.
The best thing is, if there are any left overs... the next day the cookie is just SLIGHTLY moist, and you can swallow these puppies in one gulp.

1 14 oz can of Eagle brand sweetened condenced milk.
1/3 cup lemon juice
1 tsp. vanilla extract...
follow same procedure... for processing, and then spoon onto Nilla Wafers set in cupcake wrappers let sit until firm and spoon on favorite topping. canned Cherries in syrup are always a hit.
