View Full Version : Bruschetta... to die for!

Ok... so I was having Holly and Her beau over for dinner the other night and SOOO felt like tomatos... here is some realy good tomato recipies that you might or might not know...


this one I made up (or added to as you will)
Bruschetta

4 red tomatos (still on the vine so you can see there freshness)
fresh basil (2 tsp. or to taste)
Fresh parsley (2 tsp. or to taste)
Fresh Celantro (2 tsp. or to taste)
2 cloves of garlic finley minced, (or refrigerated 1&1/2 tsp. or also to taste)
salt (I used sea salt)
pepper (I used black)
and one sweet white onion
4 tbs, EVOO (extra Virgin Olive Oil)
splash balsamic vin.



dice tomatos and small onion, mince herbs
mix all together in large bowl

cut up and toast bagett bread (i used parm. cheese and olive italian)

serve now.

Cerul, I *love* bruschetta! I'm sure Holly musta loved it!

Thx for posting that! This is wonderful to make in the summer, when I can get local tomatoes..'cos God knows I'm all about the tomatoes and EVOO-based dishes! :D

Mmmm, looks great!

Another one, even more simple.....


Tomatoes - sliced, not diced
Fresh Mozzerella - sliced
Fresh Basil leaves - whole

Stack on each other in this order:

Basil (on top)
Mozzerella
Tomatoe (on bottom)


Drizzle liberally with EVOO, consume.

Bruschetta is also fantastic served over angel hair pasta! It is one of my summertime favorites.

add a small pinch of grey salt or fleur de sal

Grey salt is a less bitter tasting salt, from the sea and Fleur De Sal actually tastes like the sea from where it comes. VERY TASTY and I'm not a big salt eater.

I have some place a recipe for pasta that is made with herbs... i will try to dig it up and post it... it is so yummy with the bruchetta.... also the bruchetta tastes great on salad... romain and baby spinich... mmmm.... no dressing required.
