ZUCCHINI BREAD
2 cups SUGAR
3 EGGS
1 cup OIL
1 Tbsp. VANILLA
2 cups SHREDDED ZUCCHINI
2 cups FLOUR
1 Tbsp. CINNAMON
2 tsp. BAKING SODA
1/4 tsp. BAKING POWDER
1 tsp. SALT
1 cup CHOPPED NUTS
Beat sugar with eggs.
Add oil, vanilla & zucchini.
In seperate bowl, sift together ALL dry ingredients.
Mix well into wet mixture.
Add nuts.
Bake at 350 for 1 hour (40 min. for muffins)
