I'm a level 32 now and, I know it's sad but, I haven't yet chosen a profession. What are your opinions, pros and cons about enchanting, blacksmithing / mining and skinning / leatherworking.
I really should choose something and start working on it. I hesitate on the leatherworking becuase that's what the bf does. Mostly it's between enchanting and blacksmithing...

My main is a druid doing skinning/leatherworking. I just find it convenient because I can make my own armor. I have a lock with skinning/tailoring, again convenience of making my own clothes, but I've found that I most enjoy the professions on my priest, mining/blacksmithing. I have fun going around digging up stuff and then melting/pounding into something useful... of course it's not really usefull for a priest outside of making my own weapons, but it is fun though. :-D
EDIT: With you being a warrior, I'd say go for the mining/blacksmithing combo.

It depends on what you want to do...
My mage is a leatherworker, tailor. I wanted to make my own clothes and bags and the leatherworking allows me to make money.
Gathering is a moneymaker if that is what you want.
Enchanting can get expensive and time consuming. I was an enchanter on my first char. Not as much fun and it took forever to raise gold because I broke my stuff rather than AH it.

Mining/smithing is good for a warrior but with mining you'll get to a point around the high 100's where it takes forever to level. I think it was right when you're inbetween iron and mithril that it seems to take forever.
Personally...I got tired of smithing, leatherworking, and tailoring because once you get higher levels it takes so much crap to make anything. Some items can take 6 or 8 different ingredients. Herbalism and Alchemy was cool because most of the formulas only take a few items. And healing potions sell for a lot on the AH.
You could just be a collector and take mining, skinning, and/or herbalism and supply raw materials to friends or the AH and make some coin.
My favorite was skinning because you basically get to loot other peoples kills. Some of those areas where there's a quest to kill a bunch of beasts...you go there and there'll be corpses all over the place. Cha-ching!!!

Here's the deal, if you're a warr, and are looking to play thru end-game (as in 10 and 25 man raids), then BS/mining is a very smart combo because there are patterns for BoP items for warriors. So it'll depend on your spec, i suppose. If you're looking to tank, there will be different considerations than if you're sticking to DPS.
If you're just looking to make a ton of money while questing and don't care about gear, then any two gathering professions will make you a decent amount of cash. My req is mining/skinning :)
Now, that said, mining is pretty lucrative at the higher levels, since once you max it out you'll really only need to go farming for yourself if you have something you need to make, other wise it's all able to go up on the AH...and since engineers, blacksmiths AND Jewelcrafters need a steady supply of ore, you're pretty much garunteed a decent market.
I'll tell you that my prot pally has mining/smithing and has been able to mantain a steady gold pile in the low hundreds (with the exeception of the two days after she got her epic 60 mount). Farming takes a while until you learn which zones are hotspots for the type of ore you need. But I think it's been well worth it ;)
Oh, for Smithing, you'll get to a point where you'll need to declare yourself either an amorsmith or weaponsmith. armor is more useful for tanks, weapons more useful for dpsers. in general, but make up your own mind :) You'll need to get a SHITTON of mithril bars and when I got the quest I was like..no..you are kidding me!!! ..but it just came down to about two solid days of farming and it was okay, so have no fear. :)
Please to not be doing enchanting. The only way to get mats for this is to either disenchant green items or buy them off AH. This is why it's usually leveled with tailoring, since mobs drop cloth which you can then make into greens and then d/e for mats. Lvling ench any other way (unless you have another toon that can funnel you greens to d/e) is nigh unto impossible.
doing skinning/leatherworking is pretty useless, since that will make you entirely dependent on drops for gear OR on maintaining a bank account big enough to buy all your mats....which can easily amount to a few thousand gold spent on ONE piece of gear...and that's no fun :(
