So...I had this viking lady who came to our viking weekend with "viking cookies". They were really thick, dense cookies with some kind of little seed in them...but they weren't sweet at all. They were, however, awesome with chili and potato soup. Anyone have any ideas about what they are?

I found these on a search for Danish cookies - they're not exactly Viking, but I bet they're close to what you're looking for!

Caraway Cookies - Kokosnødkager
1 cup soft butter
1 cup sugar
2 eggs
2 tablespoons buttermilk
¼ teaspoon baking soda
2 cups flour -- sifted
1 tablespoon caraway seed
Cream butter and sugar. Add unbeaten eggs, one at a time, beating after each addition. Add buttermilk with soda and flour. Add caraway seeds.

Chill for a few hours. Roll out to ½-inch thickness and cut with a cookie cutter. Sprinkle with sugar and bake 20 minutes in a preheated 350º oven.

Cardamom Cookies - Kardemommekager
1 egg
1 cup sugar
½ cup melted butter
½ teaspoon baking soda
1 teaspoon cardamom
1 teaspoon cinnamon
1½ cup flour
Mix ingredients in order given. Roll into balls. Flatten down to the size of a fifty-cent piece.

Bake on a greased and floured cookie sheet in a preheated 350º oven until lightly browned on the edges.
