View Full Version : Baked spaghetti pie?

Years ago I had lunch at a friends house and she served baked spaghetti pie. New jobs, marriage, blah blah we fell out of touch so I cannot get the recipe from her.

All the versions I find online have meat and or sauce in them. My memory of this dish was spaghetti in a glass pie pan, there was cheeses and perhaps Ritz on top. There was not a lot of color in the dish. This makes me think light cheddar if any at all. There was definately no tomato sauce or meat.

Anyone have any idea what this might be and have a recipe?

I've seen and tried a lot of recipes...but our favorite is just make spaghetti noodles and throw in pepperoni, sauce and cheese and bake for about a 1/2 hour on 350. Not sure if this is something you are willing to try, but my kids LOVE it!

I think you are referring to baked tetrazzini. You may have heard of turkey tetrazzini or chicken tetrazzini... it's basically the same but without meat or mushrooms. You don't put red sauce in this dish. Here's what you do: You have left over pasta, noodles, whatever... place in a large mixing bowl. In a frying pan melt butter and add flour to make a roux, then add chicken stock or turkey stock or vegetable stock, your preference, to make a thick sauce... but not to thick. Add salt and pepper to taste. If you want meat in this dish cube up already cooked chicken or turkey and throw it in the bowl with the tetrazzini. Pour the sauce over the tetrazzini and mix thoroughly. Now you may if you dessire throw in some grated parmesan or romano cheese, again mix through out. Pour the mixture into a greased lasagna pan and over the top of the mixture sprinkle (heavy or sparingly) a mixture of seasoned breadcrumbs and grated cheese. Bake in a 350 degree oven until hot and bubbly. I didn't give any exact measurements as this is very much a personal taste dish. It's nice to have after Thanksgiving when you have extra turkey. All you need now is a nice salad and a bottle of wine. It's a great meal with little work involved.
