    Default Two Recipes for Scotch Eggs

    Since I know I am not the only one who loves these here are two recipes I found for scotch eggs.

    1 1/4 pounds bulk country-style or herbed sausage
    1 teaspoon crumbled dried sage
    1/2 teaspoon dried thyme, crumbled
    1/4 teaspoon cayenne
    4 hard-boiled large eggs
    1/2 cup all-purpose flour
    2 raw large eggs, beaten lightly
    1 cup fresh bread crumbs
    vegetable oil for deep-frying the eggs

    In a large bowl combine well the sausage, the sage, the thyme, and the cayenne, divide the mixture into 4 equal portions, and flatten each portion into a thin round. Enclose each hard-boiled egg completely in 1 of the sausage rounds, patting the sausage into place. Dredge the sausage-coated eggs in the flour, shaking off the excess, dip them in the raw eggs, letting the excess drip off, and roll them gently in the bread crumbs, coating them well. In a deep fryer heat 2 1/2 inches of the oil to 350°F. and in it fry the Scotch eggs, 2 at a time, turning them and transferring them to paper towels to drain with a slotted spoon as they are done, for 10 minutes.

    Makes 4 Scotch eggs, serving 4.

    This one is for scotch eggs with fresh herbs.

    1 pound bulk sausage meat
    3 tablespoons minced fresh chives
    3 tablespoons chopped fresh parsley
    1 large egg
    1 tablespoon Dijon mustard
    5 cups fresh breadcrumbs made from crustless French bread
    1 cup all purpose flour
    6 large hard-boiled eggs, peeled
    Vegetable oil (for deep-frying)

    Mix sausage, chives, and parsley in medium bowl to blend. Whisk egg and mustard in bowl to blend. Place breadcrumbs in large bowl. Place flour in another bowl. Roll 1 hard-boiled egg in flour. Using wet hands, press 1/3 cup sausage mixture around egg to coat. Brush egg with mustard mixture, then roll in breadcrumbs, covering completely and pressing to adhere. Place Scotch egg on plate. Repeat with remaining eggs. (Can be made 1 day ahead. Cover and refrigerate.)
    Add enough oil to heavy large saucepan to reach depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 325°F. Add 3 prepared eggs to oil; fry until sausage is cooked through and coating is deep brown, about 6 minutes. Using slotted spoon, transfer eggs to paper towels to drain. Repeat with remaining 3 eggs. Serve warm.

    Makes 6.

    OH YUMMY. Scottish eggs are fantastic.
    I usually bake them on a cake rack over a baking tray @ 325 until they just begin to split.
    and it's a must to serve with Malt Vinegar or a horseradish sauce.
