Does anyone know where I can buy a waterskin on-line? I'd prefer one that's latex-free since my wife is allergic to it. A point in the right direction would really be appreciated. Thanks!

I'm thinking you are looking for a bota bag. Most of the ones I have found online have a latex lining. I did find a few that have a poly lining.

you could do a search for bota bags and attached-cork bottles on line.
If there are multiple alergies involved, latex might not be the best answer. I know I'm alergic to latex in even tiny quantities so a plastic lined bota bag was our answer, but I don't have the business cards here of the ones that we bought (my storage unit is almost 6 hours away or I could recommend the place we got ours from).

I believe Stephanie at Blue Flame Leather makes them with hard plastic inside and a sports bottle mouth piece she doesn't have any on her site but I'm pretty sure that's where Lucy's mom bought hers at the KY faire:
